I don't know about you, but sometimes I get in a serious breakfast rut. On weekdays, I want something that's healthy but not boring...which is why lately I've turned to this pumpkin yogurt with granola. The addition of pumpkin butter elevates any plain old bowl of yogurt. Just use your favorite yogurt as a base and top with pumpkin butter, granola, and fruit for a more seasonal, delicious breakfast!
If you saw in my last post, pumpkin butter is SO insanely easy to make! You just need fresh or canned pumpkin puree, maple syrup, and pumpkin spices. Of course, no one has time to make it the morning of, but you can make it ahead of time for meal prep. And, if you make it 100% from scratch, a good sized pumpkin will leave you with a large batch of delicious pumpkin butter.
I usually keep a cup or two of the pumpkin butter in the fridge to have for the week. For the rest, I freeze it in an ice cube tray to have handy for whenever I want. You can either pull the frozen cubes out the night before to thaw in the fridge or just zap in the microwave for a little under a minute.
For additional toppings, I either use homemade granola or Purely Elizabeth - I love their Original granola, but their Pumpkin is also AMAZING! For fruit, anything seasonal (apple, pear, figs, etc) works or even something simple, like a sliced banana, is delicious too. Serve in a bowl or make into a parfait!

- 6 oz yogurt of choice (greek or regular)
- ¼ cup pumpkin butter
- ¼ cup homemade or store-bought granola
- (Optional) Fruit: sliced pears, apples, figs, bananas
Instructions
- Add yogurt to bowl and top with pumpkin butter, granola, and fruit.
